My mom has always shopped at her local butcher shop. She’s definitely not wealthy, but she doesn’t flinch at spending $40+ per pound for premium protein when she cooks for our family. She taught me that the best ingredients aren’t a luxury—they’re how you show love.
Roll Play started because I wanted to bring my mom’s care into every dish we serve.
7 years ago, before “Viet Food that Loves You Too” was even a thought, we’d drive to a charming butcher shop in McLean. We’d buy their premium steaks, grill them on our Big Green Egg, and finally enjoy proteins that were both craveable and healthy.
That butcher was The Organic Butcher of McLean—named #1 Best Butcher in America by USA Today in 2024.
When we met with owner Don to discuss a potential partnership, we were given a tour of their store—it was impeccably clean. We were very excited about the giant smoker they had in the back for their famous briskets that sell out on Saturdays.
But while everything was amazing, we were most impressed with the care Don brings to his craft and his people. His team is friendly, amazingly knowledgeable, and clearly passionate about sourcing the finest products for their community.
American Wagyu Beef
This is the beef with the rich marbling and melt-in-your-mouth texture you’d expect from world-class cuts.

100% Grass-Fed Piedmontese Beef
This is a breed that originated in Italy over 300 years ago and is now raised in the American Midwest. It represents less than 1% of US cattle. Exceptionally lean but incredibly tender, with 3x the Omega-3s. Every animal is DNA tested, never given antibiotics or steroids, and raised with a ranch-to-fork approach.

Berkshire Pasture-Raised Heritage Pork
This 300-year-old English breed is considered the Wagyu of pork. Rich marbling, deep flavor, and 300% more Vitamin E than conventional pork.
